Pickling Fruit: Sodas and Cocktails! at Brooklyn Botanic Garden
A shrub is a classic cocktail component - a delicious mix of fruit, sugar and vinegar. We will preserve our shrubs using the art of canning to creating shelf stable goodies that allow us to eat (and drink!) locally year round. Expand your ideas on what pickling can be, learn to minimize waste, and increase your nutritional intake. Students will create a drink using pickled fruit. This class will be posted on the Brooklyn Botanic Garden website as soon as they update their Summer calendar.

Kimchi: When Fermentation Gets Spicy at Brooklyn Botanic Garden
Kimchi is the national food of Korea, packed with nutritious probiotics, and super fun to make. In this class we will discuss the basics of lacto-fermentation, why we do it and how it works. Come get hands on and learn to make your own jar of kimchi to ferment at home. Community Food Arts Course with Farm School NYC
Join us for the second year of the Community Food Arts course with Farm School NYC. If you don't already know about Farm School NYC, it's time that you did! It's all about urban agriculture: supporting our communities by growing our won food thereby gaining  more control over the nourishment we give our bodies. And once you've got all that amazing produce growing, what do you do with it? Come find out! Community Food Arts: (July 23 – August 27) In this advanced course, students will learn about processing food through canning, pickling, drying, fermenting, and freezing. Students will learn about food science, NYS health and food safety standards, and relevant licensing.  Students will develop their own market-ready value added products. Prerequisites: Basic cooking skills Pre-course readings will be assigned Classes take place Tuesday evenings with one possible weekend day class as well. Applications are due February 15, 2013. Canning 101 at The Natural Gourmet Institute
